Best Pannier Deal

I'm looking for advice regarding which hard panniers to put on my 04'. I have been getting by with Kawasaki's soft saddle bags, but next month I'll be riding from Southern California to North Wisconsin and back, (2500 miles one way) and I'd like more room for traveling crap.
I love the look of the Happy trails w/canyon cut, but the 7 hundy is a bit much for my liking. The weight is a concern too because I'm 6'03 and 210 lbs.. I'm not interested in the used ammo cans route either because they weight too much also. So I'm thinking plastic boxes and a beefy frame to hang them from. Maybe happy trails rack and those waterproof boxes (I forget what they're called).
Any suggestions?

Eagle's doohickey and torsion spring
Eagle's Drill through subframe bolt
Tammy's fuse relocate, headlight wire upgrade, and kill switch eliminators
Moose Skid
License Plate mounted to fender
Breather mod
Stainless Desmo screws
MSR shifter

I'm with you. It's alot of money. I decided to go with Caribou Cases. $280 for the two cases to put on my HT racks. Check out this link:

Do you have some pictures of your installation? Are the cases quick-removable for packing?
