Christmas Dinner

So whats on the menu?

We always do the traditional Thanksgiving feast but the Christmas meal here is always something different and I'm usually in charge of the kitchen. This year Mrs. Flash has requested Chicken Chimichanga's, a lot of work and I'm glad to do it. The Chimi's aren't that hard, it's all the extras that take up the time....the ranchera/chili sauce, pico de gallo, spanish rice, refrieds, salsa, guacamole, homemade tortilla chips. Most, but not all from scratch.

Years past have been tamales, turkey tacos, green chile stew, etc. If you haven't noticed it's all spicy fare. I suppose because this time of year is usually cold here like today we are having the mix, rain, sleet, and snow as the day progresses.

Merry Christmas......you got snow!!! It never occured to me that you folks that far below our border would be getting the Great White North down there. It makes for the day to be feastive IMHO.

BUT.....your choice of food is strange to an old traditional fool.....I'm an old turkey lover with all the stuffing, gravy, roast potato, veg, cranberry sauce and rolls......then topped off with Christmas cake.....bet you can't guess my background......lol.....Jolly Good!!!

Grilled up a couple of rib-eye steaks last night, with some mashed spuds and corn.

Tonight, it's whatever I can scrounge for night-shift at work...

One of these holidays though, I'm going to fire up the smoker and see about either smoking a couple whole chickens, a pork butt, ribs, or a small prime rib.

Roast chicken, Honey ham, corn, Mashed potatos and gravy, Sweet potato casserole.

And for desert we have blueberry cheesecake, pumpkin pie, coconut cake and peanutbutter balls.

Last night at the Inlaws was Chile. Today at my sisters we are having T-Bone steak. Next Sat we have the kids at our house for Prime rib mashed sweet potato and corn with cream cheese. Get to make a whole week of it. I do have to work Wed to Fri. Everyone have a Merry Christmas Jr
